Preheat the oven to 180°C

Place the cherry tomatoes on a small oven tray, drizzle with a touch of olive oil if you like, and roast for 15 minutes or until soft and blistered

In a small bowl, whisk the feta and cream together until light, smooth, and creamy.

Toast the crumpet until golden and crisp.
Step 5
Generously spread the warm crumpet with the whipped feta, then top with the roasted tomatoes, fresh basil leaves, and a drizzle of hot honey for a perfect balance of creamy, sweet, and spicy. Garnish with pepper (optional).
